500ml chicken broth (use vegetable stock for the vegan version)
A pinch of salt
2 tablespoons of margarine
1.Wash, peel and chop all the vegetables and the apple.
2.Add the 2 tablespoon of margarine to a frying pan and warm up over medium heat.
3.Once the margarine has melted, add the leek and cook until poached.
4.Add the rest of the chopped vegetables and stir until half done.
5.Pour the broth and leave to boil for 20-25 minutes.
6.Process everything until we get the desired consistency of a purée without lumps and.. serve!
